Ingredients
- 2 pounds of beef chuck, cut into 2-inch cubes
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 2 medium onions, chopped
- 3 cloves of garlic, minced
- 2 tablespoons of flour
- 3 cups of red wine
- 2 cups of beef broth
- 1 tablespoon of tomato paste
- 1 bouquet garni (a bundle of thyme, bay leaves, and parsley tied together)
- 2 carrots, peeled and chopped
- 2 cups of button mushrooms, halved
- Optional: chopped fresh parsley for garnish
Instructions
- Brown the beef: Season the beef with salt and pepper. Heat the olive oil in a large Dutch oven over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- Sauté the vegetables: In the same pot, add the onions, garlic, carrots, and mushrooms. Cook until the vegetables are softened.
- Make the sauce: Stir in the flour until the vegetables are coated. Add the red wine, scraping the bottom of the pot to deglaze. Stir in the beef broth, tomato paste, and bouquet garni.
- Slow cook: Return the beef to the pot. Bring to a simmer, then reduce the heat to low, cover, and cook for about 2 hours, or until the beef is tender.
- Serve: Discard the bouquet garni. Serve the beef bourguignon with the sauce spooned over the top. Garnish with fresh parsley, if desired.

Tips
- Beef bourguignon is traditionally served with boiled potatoes or crusty bread.
- For a richer flavor, refrigerate the stew overnight and reheat before serving.
