Ingredients

For the Beef Stew:

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 4 cups beef broth
  • 2 teaspoons Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 4 carrots, peeled and cut into chunks
  • 3 potatoes, peeled and cut into chunks
  • 1 cup peas
  • Instructions:

    Preparing the Beef Stew:

    1. Season the beef cubes with salt and pepper, then toss them in flour to coat.
    2. Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
    3. In the same pot, add the onion and garlic, cooking until the onion is translucent.
    4. Return the beef to the pot. Add the beef broth, Worcestershire saucebay leaves, and thyme. Bring to a boil, then reduce heat to low, cover and simmer for about 1.5 hours.
    5. Add the carrots and potatoes to the pot. Continue to simmer until the vegetables are tender, about 30 minutes.
    6. Stir in the peas and cook for an additional 5 minutes.
