For the Birria Beef

3 lbs beef chuck or short ribs

3 dried guajillo chiles
-
2 dried ancho chiles
-
1 dried pasilla chile (optional)

4 cloves garlic
-
½ onion
-
1 tsp cumin
-
1 tsp oregano
-
½ tsp cinnamon
-
2 tbsp apple cider vinegar
-
3 cups beef broth
-
Salt & pepper, to taste
For the Tacos

Corn tortillas
-
2 cups shredded Oaxaca or Monterey Jack cheese

Chopped onion & cilantro (for topping)

Step 1: Make the Chile Sauce

Remove stems and seeds from dried chiles.

Toast lightly in a dry pan.

Soak in hot water for 15 minutes.

Blend with garlic, onion, spices, vinegar, and some soaking liquid until smooth.
Step 2: Cook the Beef

Season beef with salt and pepper.

Place in a pot or slow cooker.

Pour chile sauce and beef broth over meat.
