Hearty Haven Beef Goulash Recipe

Ingredients

Instructions
- Brown the beef: Season the beef with salt and pepper. Heat the olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- Sauté the vegetables: In the same pot, add the onion, garlic, and bell peppers. Cook until the vegetables are softened.
- Make the stew: Stir in the paprika until the vegetables are coated. Add the diced tomatoes and beef broth. Return the beef to the pot.
- Cook the goulash: Bring the stew to a simmer. Cover, reduce the heat to low, and cook for about 1.5 hours, or until the beef is tender.
- Add the potatoes: Add the potatoes to the pot and cook for another 30 minutes, or until the potatoes are tender.
- Serve: Serve the beef goulash hot, garnished with fresh parsley if desired.
