Hearty Homemade Beef Pot Pie: A Comforting Classic Recipe

Ingredients:
- 1 lb lean beef stew meat, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, and corn)
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- 1 pre-made pie crust
- 1 egg, beaten (for egg wash)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the vegetable oil over medium-high heat. Add the beef cubes, season with salt and pepper, and brown on all sides. Remove the beef from the skillet and set it aside.
- In the same skillet, add the diced onion and minced garlic. Cook until the onions are translucent.
- Sprinkle the flour over the onions and garlic, stirring to coat. Cook for another 1-2 minutes.
- Gradually stir in the beef broth and red wine, making sure to scrape any browned bits from the bottom of the skillet.
- Return the beef to the skillet, add the mixed vegetables, and bring the mixture to a simmer.
- Transfer the beef mixture to a 9-inch pie dish. Cover with the pre-made pie crust, crimping the edges to seal.
- Brush the top of the pie crust with the beaten egg. Make a few slits in the top of the crust to allow steam to escape.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
- Allow the pot pie to cool for 10 minutes before serving.
