  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ cup (120ml) whole milk

For the Whipped Cream Frosting:

  • 2 cups (480ml) heavy whipping cream, chilled
  • ½ cup (60g) powdered sugar
  • 1 teaspoon vanilla extract

For the Topping:

  • Fresh fruits of your choice (strawberries, blueberries, kiwi, cherries, etc.)
  • Optional: A light dusting of powdered sugar

Directions

Step 1: Bake the Sponge Cake

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. Sift in the flour and baking powder, then gradually mix in the milk until the batter is smooth.
  5. Divide the batter evenly between the prepared pans and bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Step 2: Prepare the Whipped Cream Frosting

  1. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Keep the frosting refrigerated until ready to use.

Step 3: Assemble the Cake

  1. Place one layer of the sponge cake on a serving plate. Spread a generous layer of whipped cream on top and add sliced strawberries or your favorite fruit.
  2. Place the second cake layer on top and spread whipped cream over the top and sides of the cake.
  3. Arrange an assortment of fresh fruits on top of the cake in a decorative pattern.

Step 4: Final Touches

  1. Drizzle a bit of cream around the edges for an elegant look.
  2. Lightly dust the top of the fruits with powdered sugar for a festive finish.
