Classic Comfort Pot Roast Recipe

Ingredients
- 1 boneless beef chuck roast (about 3 pounds)
- Salt and black pepper to taste
- 2 tablespoons of olive oil
- 1 large onion, cut into chunks
- 3 carrots, peeled and cut into chunks
- 3 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- 2 cups of beef broth
- 2 tablespoons of Worcestershire sauce
- 4 medium potatoes, peeled and cut into chunks

Instructions
- Season and sear the roast: Season the chuck roast with salt and black pepper on all sides. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the roast and sear it on all sides until it’s browned. Remove the roast and set it aside.
- Sauté the vegetables: In the same pot, add the onion, carrots, garlic, thyme, and rosemary. Sauté until the onions are translucent and the vegetables are slightly browned.
- Deglaze and add the roast: Pour in the beef broth and Worcestershire sauce, scraping the bottom of the pot to loosen any browned bits. Return the roast to the pot and add the potatoes.
- Slow cook the roast: Cover the pot and reduce the heat to low. Let the roast cook for about 3-4 hours, or until it’s tender and can be easily pulled apart with a fork.
- Serve: Remove the roast and vegetables from the pot and serve them with the broth.
Tips
- You can add other root vegetables like parsnips or turnips to this pot roast for additional flavor.
- For a thicker gravy, you can mix a little cornstarch with water and add it to the broth during the last 30 minutes of cooking.
