Classic Comfort Pot Roast Recipe

Ingredients

  1. 1 boneless beef chuck roast (about 3 pounds)
  2. Salt and black pepper to taste
  3. 2 tablespoons of olive oil
  4. 1 large onion, cut into chunks
  5. 3 carrots, peeled and cut into chunks
  6. 3 cloves of garlic, minced
  7. 1 teaspoon of dried thyme
  8. 1 teaspoon of dried rosemary
  9. 2 cups of beef broth
  10. 2 tablespoons of Worcestershire sauce
  11. 4 medium potatoes, peeled and cut into chunks

Instructions

  1. Season and sear the roast: Season the chuck roast with salt and black pepper on all sides. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the roast and sear it on all sides until it’s browned. Remove the roast and set it aside.
  2. Sauté the vegetables: In the same pot, add the onion, carrots, garlic, thyme, and rosemary. Sauté until the onions are translucent and the vegetables are slightly browned.
  3. Deglaze and add the roast: Pour in the beef broth and Worcestershire sauce, scraping the bottom of the pot to loosen any browned bits. Return the roast to the pot and add the potatoes.
  4. Slow cook the roast: Cover the pot and reduce the heat to low. Let the roast cook for about 3-4 hours, or until it’s tender and can be easily pulled apart with a fork.
  5. Serve: Remove the roast and vegetables from the pot and serve them with the broth.

Tips

  • You can add other root vegetables like parsnips or turnips to this pot roast for additional flavor.
  • For a thicker gravy, you can mix a little cornstarch with water and add it to the broth during the last 30 minutes of cooking.
