Heavenly Homemade Banana Pudding Recipe

Ingredients
- 3/4 cup of sugar
- 1/3 cup of all-purpose flour
- 1/4 teaspoon of salt
- 4 large eggs, separated
- 2 cups of milk
- 1/2 teaspoon of vanilla extract
- 45 vanilla wafers
- 5 ripe bananas, sliced
Instructions
- Make the pudding: In a large saucepan, combine the sugar, flour, and salt. In a separate bowl, whisk together the egg yolks and milk. Gradually add this mixture to the saucepan, whisking constantly. Cook over medium heat until the mixture thickens and comes to a boil. Remove the saucepan from the heat and stir in the vanilla extract.
- Layer the pudding: In a serving dish, arrange a layer of vanilla wafers, followed by a layer of banana slices, and then a layer of pudding. Repeat these layers until all the ingredients are used, finishing with a layer of pudding on top.
- Chill and serve: Cover the banana pudding and refrigerate it for at least 2 hours, or until it’s thoroughly chilled.

Tips
- For a meringue topping, beat the leftover egg whites with 1/4 cup of sugar until stiff peaks form. Spread the meringue over the top of the pudding and bake it at 375°F (190°C) for 10-15 minutes, or until the meringue is golden.
- The banana pudding can be made a day ahead. Just be sure to cover it tightly to prevent the bananas from browning.
