For the Birria Beef

  • 3 lbs beef chuck or short ribs

  • 3 dried guajillo chiles

  • 2 dried ancho chiles

  • 1 dried pasilla chile (optional)

  • 4 cloves garlic

  • ½ onion

  • 1 tsp cumin

  • 1 tsp oregano

  • ½ tsp cinnamon

  • 2 tbsp apple cider vinegar

  • 3 cups beef broth

  • Salt & pepper, to taste

For the Tacos

  • Corn tortillas

  • 2 cups shredded Oaxaca or Monterey Jack cheese

  • Chopped onion & cilantro (for topping)


👩‍🍳 Instructions

Step 1: Make the Chile Sauce

  1. Remove stems and seeds from dried chiles.

  2. Toast lightly in a dry pan.

  3. Soak in hot water for 15 minutes.

  4. Blend with garlic, onion, spices, vinegar, and some soaking liquid until smooth.


Step 2: Cook the Beef

  1. Season beef with salt and pepper.

  2. Place in a pot or slow cooker.

  3. Pour chile sauce and beef broth over meat.

  4. Simmer covered for 3 hours (or slow cook 6–8 hours) until tender.

  5. Shred the beef and reserve the broth (consommé).


Step 3: Assemble & Fry Tacos

  1. Dip tortillas in the consommé.

  2. Fill with beef and cheese.

  3. Fold and pan-fry until crispy on both sides.


Step 4: Serve

Top with onion & cilantro. Serve with consommé for dipping.
