🥘 What Are Green Chili Burros?

Green Chili Burros (also called green chile burritos) are a traditional dish from the Southwest, especially popular in New Mexico and Colorado. They feature slow-simmered meat in a rich green chile sauce, rolled into soft tortillas and often smothered with even more green chile.

🛒 Ingredients for Green Chili Burros

  • 1 ½ lbs pork shoulder or beef chuck, cut into small cubes

  • 2 tbsp vegetable oil

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 2 cups roasted green chiles (Hatch or Anaheim), chopped

  • 1 tbsp all-purpose flour

  • 2 cups chicken or beef broth

  • 1 tsp ground cumin

  • ½ tsp dried oregano

  • Salt and black pepper to taste

  • 6 large flour tortillas

  • Optional toppings: shredded cheese, sour cream, chopped cilantro

👩‍🍳 How to Make Green Chili Burros

Step 1: Heat oil in a large skillet or Dutch oven over medium-high heat. Brown the meat on all sides. Remove and set aside.

Step 2: In the same pan, sauté onion until soft, about 3–4 minutes. Add garlic and cook 30 seconds.

Step 3: Stir in flour and cook 1 minute to form a light roux.

Step 4: Add green chiles, cumin, oregano, and broth. Stir well.

Step 5: Return meat to the pan. Bring to a simmer, cover, and cook on low heat for 1½–2 hours until the meat is tender and the sauce is thick.

Step 6: Warm tortillas. Spoon filling into each tortilla, roll into burros, and serve with extra green chile sauce on top.
